1kg chicken breast fillet thinly sliced
3 cloves garlic minced
2 tsp iodized salt
1 tsp ground pepper
250ml canned pineapple juice
2 tbsp. lemon juice
1/2 tsp. lemon rind
1 tbsp brown sugar
Instructions:
- Mixed the ingredients together and marinate for 2 days in the fridge (not the freezer) in a ziplock bag.
- Tilt the bag each day so as to keep the meat evenly coated with the marinade.
Heat a little bit of oil and fry each side until brown and caramelized.
